After a successful collaboration with 2025 Great British Menu Champion of Champions, chef Amber Francis, Danesfield House Hotel and Spa is delighted to welcome Michelin-starred chef Paul Welburn for the next highly anticipated Guest Chef Night offering an exclusive evening of culinary creativity presented in collaboration with Danesfield's own executive chef, Matthew Edmonds.
Paul Welburn, known for his gently nostalgic British cuisine with a modern twist, brings an exceptional pedigree to the table. Trained by industry icons including Gary Rhodes, Richard Corrigan, and Andrew Pern, Paul has held Michelin Stars and 3 AA Rosettes at two different restaurants - — first at London's Rhodes W1 at just 26 years old and again at The Oxford Kitchen in 2018, earning Oxford's first star in over 30 years.
Guests will enjoy an exquisite six-course tasting menu, inspired by the upcoming season and showcasing Paul’s signature style: elevated, sustainable and deeply seasonal British cooking. Diners can expect a creative journey through foraged and farmed British produce, all thoughtfully paired with Roebuck Estates English Sparkling Wine, proudly produced in Petworth, Sussex.
In addition to the culinary experience, guests will have the opportunity to purchase signed copies of Paul’s debut cookbook, Evolve — which is a twoyear labour of love that showcases the culinary growth of a Michelinstarred chef now based in Cornwall. It’s not just a collection of recipes, but a rich narrative: paying tribute to the mentors who've shaped his style, the topquality suppliers behind his dishes, and the nostalgic memories and travels that inform his cooking.
