Drew Snaith takes over the garden at The Swan in Ascott-under-Wychwood today

The Swan in Ascott-under-Wychwood in Oxfordshire will welcome Northampton-born chef, Drew Snaith, to the Cotswolds today for their second Garden Takeover.

Former head chef at Pidgin and recently appointed head chef of Acme Fire Cult, Chef Snaith will be bringing his unique flare for sustainable British cuisine to diners at the establishment today.

Diners can expect three courses with plenty of snacks showcasing the best ingredients from small producers prepared in surprising ways. There'll be nduja stuffed scotched olive followed by grilled confit squid, wood-fired red camargue rice, smoked garlic and lemon sabayon, green pepper and lemon verbena dressing. To finish, they'll be sunflower seed gelato, Mirabelle meringue and anise hyssop.

The Swan in Ascott-under-Wychwood along with The Chequers in Churchill are part of the Lionhearth group, a collection of welcoming pubs, restaurants and rooms in the Cotswolds, where locals and visitors savour fine food, superb wines, regional beers, and heartfelt conversations in a friendly environment. Four new spaces are set to open their doors in the next 12 months seeing the group double its capacity for dining and overnight stays.
