Enjoy a sugary treat this New Year's Eve - Nigel Cooke, head chef at Laura Ashley The Team Room in Solihull has shared his festive shortbread recipe that makes between 30 and 25 biscuits.
Gather 225g of softened butter, 110g caster sugar, 225g plain flour, 110g cornflour, one teaspoon cinnamon plus a zest of one orange and start by creaming the butter and sugar together until it's light and fluffy. Fold in the flour, cornflour and cinnamon and mix well. Roll the biscuit dough mixture into a ball and then roll it out until it's 1cm thick. Use a biscuit cutter to cut your cookies and place on a lined baking tray. Chill in the fridge for one hour before grating the orange zest over them and baking for 18-20 mins at 180 degrees. Finally, simply sprinkle with sugar and cinnamon!
